L’illuminazione tradizionale può causare un rapido deterioramento del cibo fresco, in termini di qualità e conservazione. Il calore e la luce delle radiazioni che vengono emesse, vanno ad intaccare l’aspetto e il sapore del cibo con conseguenze tali da renderne dannoso il consumo. 
Se da un lato l’illuminazione dona brillantezza a tutto il banco, dall’altro riduce la durata di conservazione e compromette l’edibilità del cibo all’interno dell’espositore. 

Le radiazioni emesse dall’illuminazione degli espositori, non specifica per il cibo, impattano negativamente sulle varietà di prodotti deperibili come carne, pesce, formaggi e prodotti di pasticceria e panetteria. Un’illuminazione non adeguata causa effetti negativi sui colori, sul processo di deterioramento, sui sapori e sugli odori.

L’illuminazione tradizionale, che ancora oggi viene spesso utilizzata nei banchi espositori di negozi alimentari e supermercati, favorisce lo sbiadimento della carne modificandone il colore naturale ed incrementando la crescita dei batteri. Dato allarmante, soprattutto se si considera la crescente diffusione su larga scala del cibo biologico.  I tagli di carne biologici, per esempio, risultano ancora più sensibili agli effetti della luce e del calore.

La ricerca ha dimostrato che i consumatori proiettano la percezione della tenerezza, del sapore, della succosità del pezzo di carne, nonchè del buono stato di conservazione, sul suo colore e sull’aspetto visivo. Ciò accade principalmente nel reparto gastronomia.

I clienti spesso acquistano d’impulso i prodotti del reparto gastronomia, come salsicce, formaggi e carni e per questo è importante che il loro aspetto catturi l’attenzione al primo sguardo.

I livelli di calore e di radiazioni non filtrate possono innalzare le temperature del pesce fino a raggiungere livelli critici. Le radiazioni e il calore possono inoltre indurre la fuoriuscita dell’acqua contenuta nel pesce, diminuendone il peso con conseguenti effetti negativi sulla vendita e sui relativi margini. 

Non solo il reparto carne richiede un’illuminazione adeguata per una sicura conservazione dei prodotti, ottimizzandone la durata.

La tipologia di illuminazione utilizzata negli espositori del reparto pesce fresco è fondamentale in quanto i prodotti ittici si danneggiano più in fretta e presentano un maggior rischio di sviluppare batteri e agenti patogeni rispetto ad altri prodotti.

NEGLI ESPOSITORI REFRIGERATI

La mioglobina è una particolare proteina presente nelle carni e fornisce a questi alimenti il loro colore caratteristico. Il colore della carne dipende quindi dalla concentrazione e dallo stato fisico dei pigmenti di mioglobina nelle sue tre forme. Dallo stato fisico della carne in relazione all’esposizione e assorbimento alla luce e dalla concentrazione di ossigeno assorbito. Il grado di esposizione della carne alla luce dipende dal volume delle miofibrille.

Nelle carni a bassi valori di pH determinano muscoli poco rigonfi che non lasciano penetrare la luce negli strati più profondi della carne. Risultato carne colore chiaro perché determinata dagli strati più superficiali ricchi di ossimioglobina. Infatti il pH basso favorisce una maggiore formazione di ossimioglobina perché diminuisce l’attività degli enzimi che utilizzano l’ossigeno.

Nelle carni a pH più elevato con miofibrille più rigonfie si avrà una maggior penetrazione della luce più a fondo. Le radiazioni luminose incidenti quindi tenderanno a scomporsi e ritorneranno in superficie riportando il colore dagli strati più profondi della mioglobina come risultato carni più scure. Riassumendo, quando la mioglobina è a contatto con l’ossigeno, questa si dissolve e come risultato della fotodegradazione gli alimenti che la contengono trasformano il proprio colore in varie tonalità di marroni e grigi.
